Litigo Pinot Noir '24
Litigo speaks of Crystallum’s own Shaw’s Mountain Vineyard in the Hemel-en-Aarde valley and friendship between Peter-Allan and his lawyer buddy, Eben.
De-stemmed and whole cluster (25/75%) Pinot Noir grapes are naturally fermented with minimal extraction, introducing brooding notes of fennel seed, olive tapenade, and tomato leaf to the otherwise fruit-forward varietal. Four long weeks on the skins add grippy tannic structure to hold the silky palate of dark cherry and juicy plum together while 11 months in oak barrels finesses it all into one flawless monologue.
Like some words are best left unspoken, some wines are best left unopened for 5-8 years. Litigo is one of them.
