Clay Shales Chardonnay '23
Clay Shales hails from a single vineyard tucked away in a mountain shadow on the Hemel-en-Aarde Ridge. The site's Bokkeveld shale, clay soils, high altitude, and proximity to the Atlantic all come together to create a superb Burgundian-style wine with a South African backbone.
Peter-Allan’s approach in the cellar is as always, restrained. Grapes are whole-bunch pressed with no yeast, sulphur, or enzymes added. The juice is then allowed to settle overnight and fermented in a single 2600 litre foudre for ten months.
The wonderful nose of fresh citrus and cut pears pulls you in and a rich palate of toffee and roasted macadamia nuts keeps you captive.
